Roasted Green Beans- Recipe 1 of 20

This is a pretty good Green Bean recipe. I’m trying to eat better so I want to come up with a list of about 20 vegetable recipes so that I can start eating healthier. This is the first one. I’m a pretty picky eater so I encourage anyone that is picky to try it out. You just might like it!

  1. Place baking pan in oven and preheat to 400 degrees.
  2. Cut ends off fresh green beans.
  3. Wash and rinse 1 pound green beans; set aside on paper towels so they can drain.
  4. Mix 1 tablespoon of Olive Oil, 1 teaspoon Kosher Salt, and 1/2 teaspoon freshly grounded pepper.
  5. Toss everything together in a bowl.
  6. Place on baking sheet and bake 10 minutes.
  7. Turn beans and bake another 10 minutes.
  8. Take out of oven or turn and bake another 5 minutes.
  9. When suitably cooked, take out of oven and sprinkle Parmesan Cheese on top.
  10. Enjoy!                                                                                                                                                                                                                                  This is a good recipe. One serving of green beans (1 cup) is 35 calories, 2 grams of protein, and 8 grams of carbs. Also high in Vitamin A and C. One tablespoon of Olive Oil has 119 calories. One tablespoon of Parmesan Cheese is only 22 calories. You can basically have your side of vegetables for less than 150 calories with dinner. The majority of your calories will come from the Olive Oil but that is the good kind of fat that you want to incorporate into your diet. If the fat content is too high, you can always lower the amount of oil.
